I am wondering if what the digimon spirit turns into matters what digimon/human it is. eg. when Koji was evil he turned into an evil digimon but when he was good he turned into a good digimon.

Actually it seems to depend more on the Spirit used. The Spirits used by Kouichi were corrupted at first, but when he turned good, they became their true forms. You might notice that the Spirits in General resemble the Ancient Digimon that made them in a way. The corrupted Spirits don't resemble AncientSphinxmon at all.

You might also notice that Sharmamon also became Vritramon when he used the B-Spirit of Fire.

I think it doesn't matter who uses the spirit cause you become that digimon.
I don't think using different spirits to different digimon changes the form.
Digi-eggs are different.
so if there was a Wargreymon spirit, and you used it you would become wargreymon.
